  • 1 teaspoon cumin seeds
  • ½ teaspoon mustard seeds
  • 1 sprig curry leaves
  • ¼ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 2 tablespoons sesame oil or ghee
  • Salt to taste
  • 4 cups water

Traditional Cooking Method

Traditionally, Arisi Paruppu Sadam is prepared in a man paanai (earthen pot) over a viragu aduppu (firewood stove). These methods enhance the flavour and create the authentic taste that defines Kongu cuisine.

While modern pressure cookers offer convenience, slow cooking in an earthen pot allows the rice and lentils to absorb the spices gradually, resulting in a richer texture and aroma.

Step-by-Step Preparation

Step 1: Prepare the Rice and Dal

Wash the rice and toor dal thoroughly and soak them together for 15 to 20 minutes.

Step 2: Prepare the Tempering

Heat sesame oil or ghee in a pot. Add mustard seeds and cumin seeds. Once they begin to splutter, add shallots, garlic, green chillies, and curry leaves.

Sauté until the shallots turn soft and aromatic.

Step 3: Add Tomatoes and Spices

Add the chopped tomatoes, turmeric powder, red chilli powder, and salt. Cook until the tomatoes become soft and blend well with the spices.

Step 4: Cook the Rice and Dal

Add the soaked rice and dal mixture to the pot. Pour in the water and stir gently.

Cover and cook on a low flame until the rice and lentils become soft and creamy. If using a pressure cooker, cook for 3 to 4 whistles.

Step 5: Serve Hot

Once cooked, gently mash the mixture for a soft texture and drizzle a little ghee on top.
